Beltaine Baking

the results of my Beltaine baking... the chocolatiest cookies ever. i was originally going to make fruit tarts to celebrate the warmer weather, but the chocolate craving did me in and i went hunting for the most decadent chocolate thing i could pull off within a reasonable period of time. hence, the cookies.



Chocolate Bliss Cookies
liberally adapted from a cookbook recipe to make them actually LESS chocolatey, which gives you an idea what they might originally have looked like!

1 package (8 squares) BAKER'S semi-sweet baking chocolate
3/4 cup firmly packed brown sugar
1/4 cup (1/2 stick) butter
2 eggs
1 tsp vanilla
3/4 cup flour
1/4 tsp baking powder
1/2 cup extra dark chocolate chips
1 1/2 cups rolled oats

preheat oven to 350 degrees F.

melt baking chocolate in a double boiler or the microwave. add brown sugar, butter, eggs and vanilla; stir until well blended. add flour and baking powder; mix well. stir in chocolate chips and rolled oats.

drop rounded tablespoonfuls of dough onto ungreased baking sheets. bake approximately 10-15 minutes or until no longer soft to the touch. cool on wire racks.

note: these cookies do not spread or change form while baking, so you can pack more onto a cookie sheet than the usual dozen.

You know, looking at the ingredient list, I think the oats would really make the cookie. Mmm.

8 oz plus a 1/2 cup... yikes. How much chocolate was in the original recipe?

the original recipe called for a full pack of chocolate chips on top of the Baker's chocolate. 0_o and the oats were part of my invention - there was just too much chocolate there. the original recipe called for walnuts, but as i had none on hand... *shrug* yay, oats!
